Kirsty Leanne Cooks: Week #2 Guilt Free Chocolate Pancakes

When doing my shopping last week I decided that it would be a really good idea to browse Pinterest and add all of the ingredients into my basket for the healthy recipes I wanted to try that week. Although it was both time consuming and expensive, it’s been great having so many new things to try, bringing me to my second ‘Kirsty Leanne Cooks’ post – where I post a recipe of something I have never tried to make before each week.

I have wanted to try ‘guilt free’ pancakes for a while, but I had no motivation to try them when I wasn’t dieting… why fix something that’s not broken, right? So, now I have started eating healthy plan I saw it as a perfect chance to try them out, and it kinda made me regret not doing this before now.
These pancakes are the EASIEST thing I have ever made, ever, as it’s literally just two ingredients – banana and egg. You can add whatever healthy toppings you want, however I am going to give you the ingredients for the chocolatey goodness that I had.
I added a little bit of cocoa powder to mine as an optional extra, just to add to the flavour and make them a little bit more indulgent and oh. my. god. THEY WERE AMAZING. With a little bit of my sugar free Diablo Chocolate Spread between each one it was pure heaven.
1 banana
2 large eggs
1 tbsp cocoa powder
Fat free natural yoghurt
1/2 banana
Sugar free chocolate spread
chocolate chips
1. Mash the banana in a bowl until smooth and creamy.
2. In a separate bowl mix the egg until the egg white and yolk are combined, then pour into the mashed banana mixture.
3. Add the tablespoon of cocoa powder and mix until fully combined.
4. Pour a small amount of the mixture into a frying pan that has been sprayed with fry light, cook for around 2-3 minutes. Tip: don’t have the heat up too high, I burnt my first one…
5. Once you have a stack of pancakes, spread a small amount of chocolate spread between each one, except for the top one.
6. Put the fat free natural yoghurt and banana on top, with a sprinkle of chocolate chips.
As you can see it’s such a simple recipe, and so worth trying! Okay, so they don’t taste like real pancakes, but there is just something about them that makes them delicious. I think this will be a regular for Sunday mornings in bed from now on..
